german chocolate cake

************you will need for this recipe : ************
servings: 16
oven: 350 degrees
the cake:
1 package (4 ounces) Baker’s German’s Sweet Chocolate
1/2 cup water
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup (2 sticks) butter, softened
2 cups sugar
4 eggs, separated
1 teaspoon vanilla
1 cup buttermilk

**************How to make this recipe :***************

Line the bottoms of 3 9-inch round pans with parchment or waxed paper. Grease the sides.
In a microwave-safe bowl, nuke the chocolate and water until it melts, 1 to 2 min. Stir after 1 min; it’ll probably be melted already.
In a medium bowl, stir together the flour, baking soda, and salt.
In a large bowl, cream butter and sugar until light and fluffy. Add egg yolks, one at a time, mixing well after each addition. Pout in melted chocolate mixture and vanilla and mix well. Add half the flour mixture and mix well, then half the buttermilk, blending that in as well. Repeat with the rest of the flour and buttermilk.
Beat egg whites until stiff peaks form. Fold into the batter. Pour into the three prepared pans.
Bake at 350 degrees for 30 min, or until a toothpick inserted in the center comes out clean. Cool in pans on wire racks for 15 min, then remove layers from pans and let them cool completely on the wire racks. You’ll probably have to run a knife or spatual around the sides of the pans to get them to remove cleanly, but it works.
Spread the coconut-pecan frosting on each layer, for three total layers of frosting. Don’t frost the sides.
the coconut-pecan frosting:
4 egg yolks
1 can (12 ounces) evaporated milk
1-1/2 teaspoons vanilla
1-1/2 cups sugar
3/4 cup (1-1/2 sticks) butter or margarine
7 ounces flaked sweetened coconut (about 2-2/3 cups)
1-1/2 cups pecans
Spread the pecans in a large skillet. Toast over medium-low heat about five min, shaking often. They’re done when they’re warm and you begin to smell pecans. Remove immediately from heat. Let cool, and chop into small pieces.
Beat the egg yolks, milk and vanilla in large saucepan with wire whisk until well blended.
Add sugar and butter; cook on medium heat for 12 min or until thickened, stirring constantly. The original directions say to look for a “golden brown” color but it won’t be golden brown; it’ll be more of a dark french vanilla color. Remove from heat.
Add coconut and chopped pecans; mix well. Cool to room temperature, or until it seems thick enough to spread. I spread it when it was still quite warm, and it worked out fine.

Butter Pecan Cake

*********For the cake:*********

6 ounces white chocolate chips
1/2 cup boiling water
1 cup butter, softened
1-1/2 cups granulated sugar
4 large eggs, separated
1 teaspoon vanilla extract
1 cup buttermilk
1 teaspoon baking soda
3 cups cake flour

****For the frosting:****

1/4 cup butter
2-1/2 cups pecans, chopped
22 ounces cream cheese, softened
1 cup butter, softened
32 ounces powdered sugar
4 teaspoons vanilla extract

*******Directions for making this recipe :********

****For the cake:****

1. Place white chocolate in a medium bowl. Pour boiling water over the chocolate and whisk until smooth. Set aside to cool.

2. Preheat oven to 350˚F. Grease and flower three 9-inch cake pans.

3. In an electric mixer on medium speed, cream the butter for about 1 minute by itself. Gradually add the sugar with the mixer still running, and continue to cream for about 1 minute after all the sugar is added. Add the egg yolks one at a time, beating well after each one. Reduce the mixer to low speed, and add the white chocolate and vanilla.

4. In a separate bowl, whisk together the buttermilk and baking soda. With the mixer on low speed, add the flour to the wet ingredients, alternating with the buttermilk. Begin and end with flour.

5. In a separate bowl, beat the egg whites until they form stiff peaks. Fold the egg whites into the batter.

6. Divide the batter evenly among the prepared cake pans. Bake for 20-22 min, or until a cake tester inserted in the center comes out clean. Cool the cake in the pans for 10 min, then transfer to a wire rack to cool completely before frosting.

******For the frosting:*****

1. Melt 1/4 cup butter in a large skillet over medium heat. Add the chopped pecans and cook for 5-10 min, until toasted. Cool completely.

2. In a mixer on medium speed, cream together the cream cheese and softened butter. Reduce the mixer to low speed, and gradually add the powdered sugar until fully incorporated. Stir in the pecans and vanilla. Chill at least 1 hour.

You'll probably have some frosting left over, but I'm sure you can find something to with it. Charlie was under the impression that it would be given to whomever asked for it most politely.

SLOPPY JOE SQUARES

****The sauce:****

1 tbs butter
1/4 c chopped onion
1 lb ground beef
1 c ketchup
1/2 c water
1/4 c brown sugar
2 tbs Worcestershire sauce
1 tbs red wine vinegar
2 tsp chili powder
1 tsp salt
1/2 tsp black pepper

****And also:****

2 cans Pillsbury, Big & Buttery crescent rolls
2 c shredded cheddar cheese (optional)

************How to make this recipe :**********

Heat your oven to 350 degrees. In a large skillet, melt your butter and then throw in your onion and cook until soft. Add the meat and cook until browned. Drain the grease.
add all the rest of your sauce ingredients, stir until well combined, and reduce heat and simmer for 20 min, uncovered.  In a 9×13 ungreased baking pan, roll out your first roll of crescent dough. Press into the bottom to completely cover and also press 1/2 inch up on the sides. Pour your hot sloppy joe mixture on top and spread out evenly over dough. Sprinkle your cheese evenly over the mixture, and then cover the mixture with your other roll of dough. Bake for 30-35 min. Let cool 5-10 min before eating!
*****Note: It needs to cook for atleast 30 min for the dough on the bottom to be thoroughly cooked. If the top looks really golden brown before the 30 min is up, then throw a piece of tin foil over the top*******

Texas Roadhouse Rolls

********you will need for this recipe : *******

1 cup warm milk
1 package or 2 1/4 teaspoons active dry yeast
1/3 cup sugar
3 1/2 cups all-purpose four, plus more for the board
1 egg
1/3 cup butter, melted plus 1/4 cup butter, melted (optional)
1 teaspoon salt

Honey Cinnamon Butter
1/2 cup softened butter
1 teaspoon cinnamon
2 tablespoons honey
2 tablespoons powdered sugar

*******How to make this recipe :*******

In a cup or small bowl, stir together the warm milk, sugar, and yeast. Allow the yeast to proof and begin to activate while you prepare the other ingredients. (This is not necessary, but I prefer this to using milk cold out of the refrigerator). Using a stand mixer or food processor, combine the flour, egg, 1/3 cup melted butter, and salt. Add the milk mixture and process until you have a smooth dough; it will be stickier and wetter than regular bread dough. Place the dough in a greased bowl, turn the dough to grease all sides, and cover with a towel. Let rise until it has doubled in size. When the dough has doubled, punch it down and turn it out on a floured board. Let rest for 10 min. Roll out the dough into a large, flat rectangle approximately 1/2 inch thick. Cut into 16 portions with a sharp knife and place on a greased baking sheet and let rise again, until doubled. Preheat oven to 375 degrees. Bake the rolls for 10 min on the greased baking sheet. They will be light brown when removed from the oven. If desired you can brush the tops of the rolls with the remaining 1/4 cup melted butter before serving .
Prepare honey cinnamon butter by combining butter, cinnamon, honey, and powdered sugar until well blended.

recipe : best oven baked hot wings

*********INGREDIENTS you will need :*********

1 1/3 C flour
2 T cayene pepper
2 T black pepper, coarse ground
1/3 C (plus a little) Chili powder
2 1/2 tsp onion powder
1 1/2 tsp salt, sea prefered for its fine grain
*each of these measurements is approximate -- I tend to cook by eye, but this time tried to measure while eyeing the amount

1 large bottle of Frank's Hot Sauce
1 stick of butter

***********Directions to make this recipe :********

Combine dray ingredients in gallon Ziploc bag.
Place 12 wing portions in the bag, close and shake until all portions are completely covered in the spice mixture.
Using a sieve, shake off the excess flour-spice. I generally put 3 or 4 in the sieve at a time and shake until only a thin layer is left. By the way, I usually put a paper towel in the sink and sieve over it. When I'm done most of the flour-spice is contained on the paper towel and goes easily into the bag with the leftover flour and into the trash.
Place wings on a standard plate and refrigerate for 30 - 40 min.
Toward the end of the 30 minutes, pour about 1 1/2 T vegetable oil onto a standard cookie sheet (jelly roll pan, technically). Spread oil all over pan by brush or just by moving the pan back and forth.
After the 30 minutes of refrigeration is finished, repeat flour-spice process for a second coating. Shake off excess and place side by side on the oil-prepared pan.
Preheat oven to 375 degrees.
Flip the wings over once on the pan to coat both sides with oil.
Place in the 375 degree oven and set timer for 60 min.
After 30 minutes of cooking, remove briefly from the oven and turn each portion over to crisp and cook on the reverse side.
Combine 1 bottle of Frank's RedHot sauce and 1 stick of butter in a small saucepan. Warm until butter melts.
After 60 min (total) has passed, remove chicken from the oven and let rest 5 min.
During the 5 minrest, prepare "serving dish" and "refuse dish." Long ago, I began putting a paper towel inside a grocery/plastic bag and place it in a bread pan. Clean up is quick and easy!
After 5 min rest, place all wings in a metal or glass bowl. Pour sauce mixture over the wings.
Place them in the serving dish. Grab a beer or margarita
